Ingredients

  • 1 packet Cripps Sourdough Crumpets
  • 500g fresh scallops
  • 1 brown onion, diced
  • 1 stick celery, diced
  • 1 carrot, diced,
  • 1 tbs of finely chopped thyme
  • 2 tsp curry powder
  • Salt and Pepper
  • 1 tbs olive oil
  • 100g plain flour
  • 100g butter
  • 600ml full cream milk
  • 1/4 cup chopped parsley
  • 3/4 cup of sour cream

Instructions

Treat yourself to a true taste of Tassie with this coastal‑meets‑comfort creation. Sweet, tender Tasmanian scallops are gently simmered in a creamy mild curry sauce scented with fragrant local spices, then spooned over warm, toasty sourdough crumpets that soak up every drop. The result? A golden, buttery crunch on the outside, fluffy sourdough pockets within, and silky‑sweet scallops in every bite.

Method:

  1. Use a heavy based pan, bring to a medium heat, add olive oil.
  2. Add carrot, onion, celery, thyme and curry powder. Cook until soft, 6-8 minutes.
  3. Add butter and flour, cook for a further 5 minutes, gradually add in the milk, whisking continually until the mixture thickens and flour cooks.
  4. Season with salt and pepper.
  5. Add the scallops and simmer until they look opaque, do not overcook.
  6. Toast the crumpets and divide between plates.
  7. Spoon on the curried scallops and garnish with chopped parsley.
