• 12 slices of fresh White Master Sandwich
  • 4 large eggs
  • 1 1/2 cups whole milk
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 100 grams smoked ham
  • 1/4 cup parsley, finely chopped
  • 150 grams tasty cheese


Who doesn’t love a good quiche on a picnic? But who has time to fiddle around with making pastry cases… Not me that’s for sure.

You can mix these up by using different types of bread for the base and by using whatever fillings you like. There are flavoured with egg, ham and herbs but you can do any combination you like.


  1. Preheat your oven to 180°C.
  2. Lay 12 slices of White Master Sandwich loaf out and use a small saucer to cut them into rounds.
  3. Use a clean rolling pin to flatter the bread.
  4. Spray a 12-hole muffin pan lightly with olive oil spray.
  5. Press each bread round into a muffin hole, using your fingers to get them in place – this can be done as rustically as you like.
  6. Cook for 3 minutes in the oven. This helps to ‘set’ the bread so that it doesn’t absorb the egg mixture. 
  7. Remove and let cool while you prepare the filling.
  8. Place the eggs, milk and seasonings into a mixing bowl and whisk to combine.
  9. Place the chopped parsley into the bottom of each cup and then add the smoked ham and grated cheese. Top with the egg mixture, evenly spread amongst the cups.
  10. Place the tray in the oven and bake for 12 minutes.
