4 Extreme Wellness wraps
1 can of chickpeas
1/4 a cup of tzatziki
1 medium tomato diced
¼ green capsicum diced
2 tablespoons chopped Kalamata olives
2 tablespoons parsley
2 cups of shredded lettuce


A fantastic vegetarian wrap or sandwich filling, this combination of smashed chickpea with fresh tomato and kalamata olives is full of flavour and protein and is super quick to whip up!

  1. In a bowl, combine the tomato, red onion, capsicum, olives, parsley ,salt and pepper.
  2. Drain and rinse the chickpeas and put them in a separate bowl.
  3. Smash them with your hands or with a fork.
  4. Make the wraps with a handful of lettuce, smashed chickpeas, mixed diced vegetables and a large dollop of tzatziki.
  5. Toast the finished wraps in a dry pan over medium-high heat.
