Ingredients

4 William’s Spinach & Herb wraps
1 BBQ chicken
2 stalks celery
1/2 cup mayo
1/3 cup Greek yoghurt
4 cherry tomatoes

Instructions

It’s back to school time which means endlessly trying to tempt the kids with lunches that are healthy but that they still want to eat.

These ‘Hungry Caterpillars’ are full of healthy fats and protein to keep them satisfied for longer – and they’re cool to look at and fun to eat.

  1. Remove as much meat from the BBQ chicken as you can.
  2. Place it into the bowl of your stand mixer with the paddle attachment and beat on medium-low until the chicken is very shredded.
  3. Dice the celery very finely and add it to the bowl along with the mayo and yoghurt.
  4. Mix on low until well combined and creamy.
  5. Lay your wraps out and spread the chicken spread evenly over them, right to the edges.
  6. Roll the wraps tightly and then cut into thick slices.
  7. Use a food pick (or skewer) to secure the spirals in a line and then finish your caterpillar with a cherry tomato head.
