• 4 Cripps Lunch Rolls

  • 2 celery stalks, finely diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup green capsicum, diced very finely
  • 1/4 cup fresh parsley, chopped

  1. Shred or dice the chicken into bite-sized pieces. I like to keep mine a bit chunky but cut to whatever size you prefer is perfect.
  2. In a large mixing bowl, combine the mayonnaise, Greek yoghurt, and Dijon mustard. Whisk until smooth and well combined. 
  3. This creamy dressing will serve as the base for your chicken salad.
  4. Add the chopped chicken to the bowl with the dressing.
