• 4 Kardelen Turkish breads
  • Butter
  • 1 Large cooked chicken breast, or left-over roast chicken – diced
  • 1 Large red apple, diced
  • 2 Sticks of celery, diced
  • Quarter Cup of walnuts, chopped
  • A third of a Cup of mayonnaise
  • 1 teaspoon of Dijon mustard
  • Quarter Cup of chives, snipped
  • Quarter Cup of parsley, chopped
  • Salt and pepper to season
  • 1 Cos lettuce, washed, dried and shredded
  • Microgreens to garnish


Introducing the delectable Chicken Waldorf Turkish Sub – a delightful fusion of flavours in every bite. Imagine succulent grilled chicken (or leftover roast chicken) combined with the sweetness of apples, the crunch of walnuts and the creaminess of this homemade dressing. Perfect for a summery lunch or satisfying dinner, this sub is sure to become a new favourite.


  1. In a bowl add the chicken, apple, celery, walnuts, chives, and parsley, stir to combine.
  2. In a separate bowl add the mayonnaise and Dijon mustard.
  3. Add the mayonnaise to the chicken mixture, season with salt and pepper and combine well. Set aside.
  4. Split each Turkish Bread, you can either toast the bread in a toaster or butter and add to a heated griddle to toast the inside.
  5. Add the shredded cos lettuce to the base of the Turkish bread, spoon on the Waldorf mixture and garnish with microgreens.
  6. Top with the remaining toasted bread.
