• 5 Cripps Fruit Buns (leave out overnight to dry out.)
  • 100 ml of thickened cream
  • 300 ml of full cream milk
  • 3 Free range eggs
  • 3 ripened bananas, sliced diagonally
  • 30 grams butter
  • 1 Tbsp. of pure maple syrup
  • 6 Medjool dates, pitted and sliced


This recipe is a great way to combat food waste, with heavenly results! Whether you leave your fruit buns out overnight, or use stale ones up alongside those pesky brown bananas, this recipe is delightfully indulgent.


  1. Slice each fruit bun into 4 slices, from top to bottom.
  2. Using an oven proof baking dish, arrange the fruit buns to fit into the dish.
  3. Heat a non-sick pan to medium heat, add the butter and maple syrup, when the butter begins to foam add the banana slices and dates.
  4. Turn bananas once they start to caramelize, approximately 1 minute, remove and set aside on a plate. Continue to soften the dates for a further 1 minute. Remove from the heat and mash with a folk.
  5. Place each banana slice between the sliced buns. Spoon over the mashed dates.
  6. In a jug whisk the eggs, add the milk and cream and combine.
  7. Carefully pour the custard mixture over the top of the buns.
  8. Bake in the oven for approximately 40 to 45 minutes until the custard is just set and the buns are golden on top.
  9. Dust with icing sugar and serve with a scoop of vanilla ice-cream.
