Muffins:
Traditional English, Wholemeal or Fruit
Ingredients:
- 2 Cripps Nubake Muffins ~ separated and lightly toasted2 ripe but firm peaches
- Icing sugar for dusting
- 150grm marscapone cheese
- Pure honey, to taste
Method:
~ To peel the peaches, blanch in boiling water for a fewseconds and then plunge into ice-cold water. The skin should peel off easily.
~ Halve the peaches, remove the stone and slice into even sections. Refrigerate until required.
~ Mix a little honey with the marscapone cheese.
~ Dust the peach slices with icing sugar and glaze under a hot grill until some caramel colour is obtained.
~ Lay warm peach slices over split, toasted muffins.
~ Top with a good dollop of marscapone and drizzle a little warmed honey over for effect.
