Muffins:
Traditional English, Wholemeal or Fruit
Ingredients:
- 2 Cripps Nubake Muffins ~ separated and lightly toasted½ punnet of strawberries, raspberries, blueberries and blackberries
- 200ml water
- 150grm sugar
- Small piece of cinnamon quill
- Juice and zest of 1 orange
- 100grm marscapone cheese
- 25grm honey
Method:
~ Bring the water, sugar, cinnamon, orange juice and zest to theboil while stirring. Continue to stir until the sugar dissolves.
~ Wash and hull the berries and halve the strawberries if large.
~ Reduce the heat of the liquid to about 90degC and add the berries. Gently poach these until they begin to soften.
~ Whip the marscapone and honey together.
~ Split and toast 2 muffins and spread with butter or margarine.
~ Carefully strain off the syrup from the berries and pile these on top of each muffin half.
~ Add a dollop of marscapone/honey mix to each muffin and serve.
