Poached egg with caramelised onion and spinach

Ingredients:

  • 2 Cripps Nubake Muffins ~ separated and lightly toasted200grm onion or shallot, sliced finely
  • 30grm butter
  • Balsamic vinegar
  • 100grm fresh spinach leaves
  • 4 eggs, poached
  • ¼ red capsicum, roasted and cut into thin strips

Method:

~ Melt the butter in a heavy-based pan on low heat and fry theonion very slowly, while stirring, until a golden brown colour is reached.

~ Add approximately 20ml of balsamic vinegar and continue cooking until no liquid remains. A little brown sugar may also be added.

~ Cook the spinach in a little boiling salted water for 1 minute. Drain and keep warm.

~ Meanwhile, split and toast 2 muffins and spread with butter or margarine.

~ Place the caramelized onion on the muffin halves followed by the spinach.

~ Place a warm poached egg on top of the spinach and decorate with the capsicum strips.

~ Season with salt and cracked black pepper and serve immediately.
