Muffins:
Traditional English, Wholemeal or Cheese and Bacon
Ingredients:
- 4 Cripps Nubake Muffins ~ separated and lightly toasted200grm onion or shallot, sliced finely
- Balsamic vinegar
- 60grm butter
- 4 swiss brown mushrooms
- 4 minced beef patties, preferably including chopped fresh herbs
- Tomato relish, pre-purchased or homemade
Method:
~ Melt the butter in a heavy-based pan on low heat and fry the onion veryslowly, while stirring, until a golden brown colour is reached.
~ Add approximately 20ml of balsamic vinegar and continue cooking until no liquid remains. Keep warm (A little brown sugar may also be added during cooking if desired).
~ Remove the stalk from the mushrooms and wipe with a clean damp cloth.
~ Melt the remaining butter and brush over the mushrooms, then place under a hot grill. Cook each side until mushrooms soften and shrink a little. Keep warm.
~ Cook the beef patties in a pan or under the grill.
~ Split and toast 4 muffins, spread with butter or margarine if desired.
~ Place onion on the bottom half of each muffin, followed by the mushroom. Season with salt and fresh ground black pepper.
~ Place the beef patties on top of the mushroom and finish with tomato to taste.
~ Cover with the muffin top and serve immediately.
Note; additional ingredients such as lettuce, bacon or cheese may be included as desired.
