Chinese style duck breast with spring onions

Ingredients:

  • 2 Cripps Nubake Muffins ~ separated and lightly toasted2 duck breasts
  • 25ml sherry (sweet or dry)
  • 30ml maple syrup
  • Hoi sin sauce
  • 2 spring onions

Method:

~ Remove the silver skin from the underside of the duck breast.~ Rub the skin with a little salt and lay in a bowl with the sherry. Cover and refrigerate.

~ After 1 hour, poor over the maple syrup and turn breasts to coat in syrup. Refrigerate for 1 hour.

~ Slice the spring onions on an angle finely.

~ Cook the duck breasts in a moderate oven (190 degC) for 15 minutes. The skin will turn quite dark. Remove and rest 2 minutes before slicing across the breasts in ½-1cm slices. Keep warm.

~ Split and toast 2 muffins and spread with hoi sin sauce.

~ Lay duck breast on top of the muffin halves and garnish liberally with spring onion.

~ Serve immediately.
