Muffins:
Traditional English or Cheese and Bacon
Ingredients:
- 2 Cripps Nubake Muffins ~ separated and lightly toastedApproximately 12 baby cos leaves, washed and drained
- 4 rashers of bacon, rind removed
- shaved or grated parmesan cheese
- 60ml mayonnaise
- ¼ clove of crushed garlic
- juice of ½ a lemon
- 1 small anchovy fillet, crushed (optional)
Method:
~ Whisk the mayonnaise, garlic, anchovy and lemonjuice together.
~ Grill or fry the bacon, drain off any oil and keep warm.
~ Split and toast the muffin halves and lay cos leaves over each half (break leaves up if necessary).
~ Drizzle dressing over the lettuce.
~ Halve each rasher of bacon and place on top of the lettuce.
~ Scatter or place the parmesan over the bacon and finish with any remaining dressing.
~ Serve immediately.
